Black Bean Lettuce Bundles

These were surprisingly tasty.  One of the few recipes that didn't require salt (or cheese) to help with the yum factor.  We did find that it's best eaten fresh.  Several days later it was still yummy, but not the same, ya know?

Anyhow, really easy recipe.  Matt made this one and I didn't even have to help.  And of course, Ada devoured it.

1 can black beans, drained and rinsed
1/2 large ripe avocado, peeled, pitted, and mashed
1/2 medium green bell pepper (I used red), seeded and chopped
3 green onions, chopped
1/3 c chopped fresh cilantro (this really makes it...don't use dried)
1/3 c mild, no salt added or low sodium salsa
2 T lime juice
1 clove garlic, minced
1 t ground cumin
8 large romaine lettuce leaves

In a bowl, mash the beans and avocado together with a fork until well blended and only slightly chunky.  Add the remaining ingredients except the lettuce.  Mix together.  Place approximately 1/4 c of the mixture in the center of each lettuce leaf and roll up like a burrito.
